The selected specialty green coffees are sourced through our long-standing partners in Hamburg and Bremen. In close collaboration with them, we continuously seek out new coffees from around the world, with a strong focus on sustainable cultivation and outstanding quality.

At the heart of our coffee roastery is our Probat roaster from 1994. Since the day we opened, coffee has been roasted by hand on this machine in the center of our Kreuzberg café – right in front of our guests. It’s a traditional, gas-powered drum roaster, just like in the old days. Roasting is a balance of craftsmanship, sensory perception, and intuition – engaging all the senses.

Through sample roasts, we determine the ideal color, roast time, and temperature for each individual coffee, carefully bringing out the very best in every bean. Each coffee is about unlocking its full complexity – the many nuanced aromas and flavor compounds that define its character.

In its green, unroasted state, only hints of a coffee’s potential can be detected. Its true personality and most beautiful qualities emerge after roasting. How precisely these qualities are revealed depends on the skill of our roast master – just a few seconds can make the difference between good coffee and a truly exceptional cup.
